Nick and Anjali met in October 2021 as so many other healthcare workers do; online. Their first date was at the Locomotive coffee shop in Jupiter. Anjali ended up missing half of the University of Florida vs LSU football game because of how well the date was going, which if you know Anjali, means she really liked him. They went on a few dates and kept in touch with each other throughout 2022. Major life events happened for Nick and Anjali in 2022, with both purchasing their first homes, and also beginning new jobs. Later that year, Nick formally asked Anjali out in October of 2022. Since their first date, they’ve learned that they are astonishingly similar in a lot of ways, including both having dogs named Shadow, both driving Audi’s (Anjali had to 1 up Nick and drive an Audi A6 to his A5), having almost the exact same house code (not giving that away), and very similar upbringings.
2023 was a blur. Lots of dates, meeting each others’ friends, attending college football games (Go Gators), golfing, beach trips to tan and hunt for shark teeth, trips to Minnesota, meeting one another's families, and of course, learning all of Shadow’s commands. In August, Nick told his sisters at the family cabin in Minnesota that he intended to ask Anjali to marry him. At the time, he didn’t know when, but he knew she was the one.
Fast forward to December of 2023. Despite Anjali's coworkers’ beliefs that she might be getting engaged at Christmas, she was disappointed to find out she was only getting a signed Tim Tebow Gator jersey. Not one to despair, she quickly moved on, put on a strong face, and had Nick hang the jersey up in their Southern Estate. Little did she know that Nick had already secretly driven up to Lake City to formally ask her Father's permission to marry her.
Jan 6, 2024. Part of Anjali’s Christmas gifts included some fishing wear. Nick and Anjali decided that it would be a good weekend to go out to “their spot”. Of course, this day ended up being blustery, and cold. Water temperatures in the Indian River lagoon were 64 degrees and it was high tide that morning. Usually, when they go out fishing, they wade through the mangroves in shin-deep water. That day, the water was above waist height. Anjali, having shorts and a long sleeve shirt on, had no interest in wading out. What she didn’t know, was that Nick had arranged to have his friend Jeremy in a boat to take some pictures of Nick proposing. Thinking quick, Nick told Anjali she needed to, “suck it up” and proceeded out into the freezing lagoon. Anjali, not wanting to miss the first fish to ever be caught in “their spot” begrudgingly trudged out into the lagoon behind him. About 5 minutes into fishing, Anjali’s line tangled. Nick said he would get her a new lure, handed her his rod (this was the sign to his friends in the boat that he was about to propose), and dug through the fishing lure case in Anjali’s backpack in search of the ring he had bought for her. Somehow, in spite of the frigid water and adrenaline coursing through his body, Nick managed to get the ring out, and get down on one knee as Anjali was turning around. The rest was a flash. Anjali nodded her head ‘yes’ frantically, then fireworks began to go off. In hindsight, Anjali and Nick believe she may have had a mild case of hypothermia occurring in this moment, but she did eventually say yes, and Nick managed to get the ring on without dropping it into the lagoon. Everyone in the boat had not only managed to take unforgettable pictures, but also had brought some champagne with them to celebrate.
Both Nick and Anjali are so incredibly happy and excited to embark on their life together, and have all of their family and friends by their sides on their big day!
